Avocado Toast with Cheddar Jalapeño Cornbread

Now that you’re fully in work from home mode, you finally have time to make breakfast before hopping on that 8 a.m. conference call. It might be one of the only benefits of what’s plaguing our world right now - that, and only getting dressed from the waist up. I know I’m 110% guilty.

Over the past couple of weeks I’ve been making a conscious effort to share recipes that use traditional pantry staples with a pop of fresh ingredients. I’m hoping you’re able to get your hands on a bag of fresh avocados for this gem of a breakfast meal. In Tampa, we’ve consistently had a shortage of Clorox wipes, toilet paper (seriously, who’s pooping that much?!!) and eggs. Other than that, we’ve been incredibly lucky with availability of household items and ingredients.

If you’re local and aren’t up for a face-masked grocery store adventure, there are several local farms offering curb-side pickup and/or delivery for fresh produce. I’ll list a few below:

Black Finger Farm - farm stand is open from 10 a.m. - 2 p.m. on Saturdays, offering fresh, organic vegetables that have traveled less and have been touched less. You can also pre-order “the biggie” or “the smalls” boxes of veggies each week through their website! Pick-up is available at two locations.

Naked Farmer - is currently offering farm-to-door delivery or pick-up in Downtown Tampa or Downtown St. Pete. They’re selling an assortment of farmers baskets, meats and veggie boxes.

St. Pete Saturday Morning Market - has converted their market into a drive-through / pick-up format. You can purchase fresh product from vendors like Little Pond Farm, Worden Farm, First Leaf Farm, Life Farms, or visit their websites to coordinate a pre-order, if available.

I’m making the most of our newfound kitchen time, while we have fresh ingredients to cook with. Exhibit A: Griddled Cornbread Avocado Toast. 👸🏻 It’s super easy to make, flavorful and a solid start to any day.

Ingredients:⁣

  • 1 box of your go-to cornbread mix⁣

  • 1 cup shredded sharp cheddar ⁣

  • 1/4 cup canned green Chiles, sliced ⁣

  • 3 tablespoons unsalted butter ⁣

  • 1 avocado, peeled, seeded + sliced⁣

  • Handful of halved cherry tomatoes ⁣

  • 1/2 cup of fresh mozzarella, cubed

  • Drizzle of good olive oil⁣

  • Garnish with flaky salt, a sprinkle of red pepper flakes + squeeze of lime juice ⁣ ⁣ ⁣

Directions ⁣

1. Prepare cornbread per box instructions. When batter is finished, fold in cheddar cheese and chiles. Bake per box instructions. Remove from oven, let cool, then slice into squares. ⁣ ⁣

2. In a small pan, melt butter over medium-high heat. Add 3 cornbread squares and fry for 1-2 on each side, until golden brown. ⁣ ⁣

3. Top griddled cornbread with avocado slices and tomatoes. ⁣ ⁣

4. Finish with a drizzle of olive oil. Garnish with flaky salt, red pepper flakes and a squeeze of lime juice. ⁣ ⁣
